Ingredients

For the base:
  • 270 grams of 0000 flour
  • 2 teaspoons baking soda
  • A few drops of vanilla essence
  • Milk (amount needed to bind)
  • 150 grams of butter
  • 120 grams of sugar
  • 3 eggs
  • 5 apples
For the custard:
  • 250 ml milk
  • 55 grams of sugar
  • Lemon peels (without the white part)
  • 1 cinnamon stick
  • 2 egg yolks
  • 20 grams of cornstarch

Preparation

Pie crust:
  1. Prepare the apples: Peel the apples, cut them into thin slices and set aside.
  2. Mix the dry ingredients: In a bowl, combine the flour with the baking soda.
  3. Whisk together the eggs and sugar: In another bowl, beat the eggs together with the sugar until you get a creamy mixture.
  4. Add the butter and vanilla: Stir in the melted butter and a few drops of vanilla essence. Mix well.
  5. Form the dough: Gradually add the flour mixture, alternating with a splash of milk, until you get a soft but manageable dough.
  6. Prepare the pan: Grease a pan with butter and place the apple slices decoratively on the base. Pour the batter over the top and level with a spatula.
Custard:
  1. Infusing the milk: In a pot, heat the milk with the lemon peels and cinnamon stick. Remove from the heat when it boils and let it rest for a few minutes.
