The recipe is described below:
Ingredients
For the base:
- 270 grams of 0000 flour
- 2 teaspoons baking soda
- A few drops of vanilla essence
- Milk (amount needed to bind)
- 150 grams of butter
- 120 grams of sugar
- 3 eggs
- 5 apples
For the custard:
- 250 ml milk
- 55 grams of sugar
- Lemon peels (without the white part)
- 1 cinnamon stick
- 2 egg yolks
- 20 grams of cornstarch
Preparation
Pie crust:
- Prepare the apples: Peel the apples, cut them into thin slices and set aside.
- Mix the dry ingredients: In a bowl, combine the flour with the baking soda.
- Whisk together the eggs and sugar: In another bowl, beat the eggs together with the sugar until you get a creamy mixture.
- Add the butter and vanilla: Stir in the melted butter and a few drops of vanilla essence. Mix well.
- Form the dough: Gradually add the flour mixture, alternating with a splash of milk, until you get a soft but manageable dough.
- Prepare the pan: Grease a pan with butter and place the apple slices decoratively on the base. Pour the batter over the top and level with a spatula.
Custard:
- Infusing the milk: In a pot, heat the milk with the lemon peels and cinnamon stick. Remove from the heat when it boils and let it rest for a few minutes.
- Whisk together the yolks and sugar: In a bowl, mix the yolks with the sugar and cornstarch until you get a homogeneous paste.
- Add the milk: Strain the milk to remove the peel and cinnamon, and slowly pour it over the yolk mixture, stirring constantly.
- Cooking the cream: Bring everything to low heat and stir until thickened. Remove and let cool.
Assembly and cooking:
- Pan cooking: Cover the pan and cook the base over very low heat for 20-30 minutes, or until a toothpick inserted comes out clean.
- Cool and decorate: Carefully unmold the cake once warm and cover it with the pastry cream.
Additional tips:
- Use a heavy-bottomed skillet to prevent burning the base.
- If desired, you can caramelize the apples before placing them in the pan.
- For a kick, sprinkle on cinnamon powder or icing sugar before serving.
- Accompany this cake with a scoop of vanilla ice cream for an even more delicious dessert.
Enjoy this irresistible apple pie, perfect for sharing!
